This study assesses vitamin Retention in Sun-Dried Tomatoes in Abakaliki Meat Market. A descriptive survey design was employed and data were gathered from 263 traders in Abakaliki Meat Market. Findings reveal that shade drying preserves more vitamins than open-sun drying The study recommends support for small processors to adopt improved technologies
