This study assesses proximate Composition of Kilishi Produced by Traditional Processors in Kure Market, Minna. A descriptive survey design was employed and data were gathered from 152 consumers in Kure Market, Minna. Findings reveal that kilishi protein content supports its value, though salt levels run high The study recommends enforcement of food safety standards by regulatory agencies
